I was inspired by an Instagram post to create a version of a salad.
Here is what I ended up with:
Chopped kale (or your favorite greens)
Shiitake mushrooms and shallots (or purple onion) sautéed in avocado spray
Roasted kabocha squash (or butternut squash) and roasted beets
Pumpkin seeds
Balsamic vinegar
I mixed the sautéed vegetables and the roasted vegetables with the greens. I sprinkled the pumpkin seeds on top and followed with a splash or two of balsamic vinegar.
You could put a chunks of protein such a chicken or salmon in it too.
That’s it!
I kept the items separate and combined at the last minute.

It was yummy and satisfying and very low points.
