Last week I was able to try a few new things in my kitchen. It’s convenient that my generous friend across the street has a garden and she was giving me lots of mint. I’ve used it to make a delicious tea in the past but this time I tried to mimic the limonana drink we’ve had in Israel. It’s basically crushed ice, crushed mint, lemon and sugar or in my case a sweetener made from a fruit extract. Did it really come close to the professional version? No, but it was tart and sweet at the same time and it was yummy and refreshing.
I tossed together a salad plate made from butternut squash zoodles, kale and cabbage micro greens, sautΓ©d shredded rainbow carrots, sautΓ©ed stem of beets, egg whites, grape tomatoes and a drop of a zero points dressing!
Later in the week I saw a recipe online for chicken paella. It wasn’t a WW recipe but I was able to make it more weight watcher friendly by reducing the oil and using brown rice instead of regular riceοΏΌ.
It was really yummy and just fun to try something different for a change of pace.
