I started to write this numerous times but had so much and so little to say at the same time, so I put it off. But, I imagine Iām not the only one out there in this CRAZY world that craves some normal… so here goes:
Here is an EASY PEASY non recipe. I used 4 green apples, a sprinkle of lemon juice and a shake of cinnamon to make this Faux Apple Pie. First I sprayed the pan with Pam, sliced the apples, layered them. Then I sprinkled a bit of lemon juice, shook on a bit of cinnamon and baked at 350 uncovered for about 45 minutes. It’s zero points on WW.
Making this helped me feel normal. It gave me something sweet to eat instead of numerous more dangerous items lurking in the back of my pantry.
I’ve been trying to take a walk every day while still abiding by the social distancing rules. This has been a game changer as far as maintaining whatever little sanity I had to start. Even if I need to dress warmly, feeling the fresh, chilly air, seeing the few other humans that venture out, spotting buds of flowers, has kept my spirits up or improved them when I get down. Today, it was rainy and not conducive to an outdoor walk. I really missed my ‘airing out’ session!
